Brown Sugar Chicken

This brown sugar chicken is savory and sweet. I enjoyed the subtle flavors of it. Try it sometime.

  • 1 to 1 1/2 lb boneless chicken breasts or strips
  • 1/3 cup brown sugar
  • 1 tsp salt
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper

Preheat oven to 450 degrees. Line baking dish with aluminum foil and coat with cooking spray. Mix dry ingredients in shallow bowl. Pat chicken dry, dip in mixture and coat well on both sides, and place in dish. Sprinkle any remaining coating over top. Bake 15-20 minutes; spoon or brush sauce over the top, then switch oven to broil to allow coating to caramelize (2-5 minutes). Allow to cool 5 minutes before serving.

Creamy Tomato Basil Pasta

The Soup Diva

  • 8 oz pasta (or pasta substitute)
  • 2 tbsp butter
  • 2 tsp minced garlic
  • 1 tsp dried basil
  • 1 small (7-9 oz) can tomato sauce
  • 1 cup heavy cream or half-and-half
  • 1/4 cup grated Parmesan
  • 2 tsp salt (for pasta water)
Cook pasta in salted water according to directions; drain and return to pot over medium-low heat. Stir in butter until melted, then seasonings and tomato sauce, then cream and cheese. Serve when cheese is melted and incorporated.

Netflix and Chill Out To Kimmy Schmidt

We have been binge watching The Unbreakable Kimmy Schmidt on Netflix while enjoying the coolness of our air conditioning system which has refrigerant. Sometimes Netflix and Chill can mean something else that is different from the popular slang of the day.

Another Theme Change – WordPress Twenty-Sixteen Is Looking Good

Yeah, I change themes like some folks change their minds or clothes. I am now using the modern looking Twenty-Sixteen theme. I like the black background with white text to give it a crisp, elegant look. The widgets look better too. I am using a blue background to give it a little color. Some of my more popular categories are now found in a Special Features menu dropdown. I hope you will find it easy to use and navigate. Thanks for putting up with all my changes since I have been here on WordPress.

Staying Cool

Air-conditioning-fanLiving in the southern USA (and I guess the southern Hemisphere too) it gets hot in April. All this global warming has means it gets warmer, sooner these days. Our air conditioning hasn’t worked right lately and we had refrigerant put in it today so things are cooling off in the house. A cool house is a happy house. A cool person is a happy person.

Staying cool is important for a lot of reasons. It means not getting angry easily and keeping calm. Our world has become a hotbed for anger, conflict and strife so we all need to do our part to keep things chill. Cooler heads should always prevail. Violence is easy, peace can be difficult. Always do the hard thing.

Whether it means a fan or an air conditioner or breathing in and out we all need to practice staying cool.
