Happy Sunday Everyone!

It’s the second Sunday of 2016 and it’s kind of cold and damp where I am but that won’t phase me, it is going to be a great day. This morning I have enjoyed some blogging and coffee, that is such a winning combination if you ask me.

I am headed off to church in awhile. This afternoon we are taking down Christmas decorations for the season. No worries they will go back up again in November. Here in America it’s Downton Abbey night so us fans are excited about that. Sometime today I hope to get a little nap in.

I hope whatever you are doing today is good fun or at least leisurely. Have a great Sunday my friends. Love and peace to you all.

No one won Saturday’s record jackpot of nearly $950 million in the multi-state Powerball lottery, officials said, driving the haul for a winning ticket in the next draw to $1.3 billion, lottery officials said.

This is crazy, $1.3 billion is a lot of money. Lottery players are going to rush to get their tickets for the next drawing. I have heard where winning the lottery has caused more problems for the winners than it has solved. Funny how that happens.

This reminds me a little of the TV show “Revolutions” where there were different national territories established after the power went out across the world. It also has shades of Panem of “The Hunger Games”

Mexican Flag Cornbread

This cornbread paired with the “Easy No-Peasy” Vegetable Beef Soup is a great meal!

This cornbread contains the flavors of Mexico as well as the colors of its flag!
  • 1 cup self-rising white cornmeal mix
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1 cup Mexican blend shredded cheese
  • 1/2 cup milk
  • 1/2 cup frozen corn
  • 1/4 cup sour cream
  • 2 tbsp diced pimiento
  • 2 tbsp white sugar
  • 1 tbsp jarred jalapenos, seeded and diced fine
  • 1 tbsp chives, diced fine (optional)
  • 2 tbsp your favorite cooking oil + 1 tbsp for pan

Preheat skillet or cake/pie pan in oven at 350 degrees. Stir together all ingredients until incorporated (do not over-stir). Remove skillet or pan from oven, pour in 1 tbsp oil and swirl around (careful, it will sizzle!) Pour in cornbread batter immediately and place back in oven. Bake 15-20 minutes; switch to broil and leave in oven until top is desired brownness (about 5 minutes).
