American Goulash
Tonight’s yummy dinner.
This is a companion post to my Hungarian Gulyas recipe as well as Chili Macfredo. It is similar to those dishes, but deserves its own mention due to differences in ingredients, especially the spice blend.
- 1 lb ground beef
- 1 large (28 oz) can crushed tomatoes
- 2 cups elbow macaroni noodles
- 1 sweet onion, diced (1/2 cup)
- 2 tsp paprika (I used 1 tsp sweet and 1 tsp smoked)
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- salt and black pepper to taste
- dash of red pepper flakes (optional)
Brown ground beef in Dutch oven, large pot, or large skillet; do not drain. Add onion and all seasonings and stir often until onion has softened. Doing Your Best, Whatever That Looks Like
Giving it all you got daily can be challenging. There are some days when faking it until you make it is the best you can do. I understand that doing your best is important and, in some occupations, you cannot have an off day.
All I am saying is that being human comes with boundaries and limitations that sometimes cannot be overcome. Doing the best, you can does not always mean 100% effort, often it means something closer to 50%.
I guess it depends on your attitude or how you are feeling physically and mentally. Circumstances can also dictate what doing your best really means. Expectations and reality are two different things here and how you approach what life throws at you and how you meet those challenges. Do your best, whatever that looks like and then let it go. There is only so much one person can do in this life.

Reaching your goals means grinding it out daily. Your work can be mind-numbing and frustrating but it’s worth it in the end, hopefully. It’s hard these days and filling your basket is more of a challenge than it has ever been so ya gotta keep going.
