Something About Having Joy

Joy is something everyone needs in life to make it better. Sure you have happiness and euphoria and bliss but joy is something that seems to be different, more meaningful. There is a old church song I have joy, joy, joy down in my heart and you know that is where it starts. Good things can come from the heart if we are inspired.

In this mean world we live in joy can be the salve that can heal burns and wounds. Joy can be infectious too. When you have joy people pick up on it and hopefully want what you got. I am giving you some joy today and I hope you will spread it around to your friends, family and strangers who desperately need some themselves.

A Splash Of Loveliness On A Sunday

The knockout roses are doing their thing and providing great color and beauty. Nature never ceases to amaze.

Status Update

Celebrated, napped, did computer stuff, blogged a little, watched Justify win the Kentucky Derby and checked out Star Wars: The Last Jedi on Blu Ray. Yep it’s been a good day.

Mint Julep Iced Tea

For a little beverage action on Derby Day. Mint Julep Iced Tea is quite good.

Sweet and refreshing, with a bourbon kick!

  • 1 quart-sized tea bag
  • 1/3 cup brown sugar
  • 1 tsp mint flavoring
  • Kentucky-brand bourbon
  • Fresh mint to garnish (optional)

Brew tea in 3 cups (or so) of water; allow to steep until very strong. Remove tea bag, squeezing out all the goodness, and stir in sugar and flavoring. When ready to serve, fill glass with ice, pour in tea, and top with desired amount of bourbon (I used about 3/8 cup). Stir and top with sprig of mint if desired.

Derby Pie

It’s not Derby Day without Derby Day Pie!

  • ½ cup flour
  • 2 eggs, slightly beaten
  • 1 stick melted butter
  • 1 tsp vanilla
  • Pinch of salt
  • 1 cup pecans, broken up
  • 6 oz. chocolate chips
  • 2 shallow uncooked pie crusts (thawed)

Two Things Happening Today – Cinco De Mayo and Kentucky Derby Day

There are two important cultural events happening today in America.

First its Cinco De Mayo, the date is observed to commemorate the Mexican Army’s difficult victory over the French Empire at the Battle of Puebla, on May 5, 1862.

Second it’s The Kentucky Derby horse race in Louisville. This is the 144th annual Running Of The Roses. Justify is the odds on favorite to win today.

So it will be interesting to see the fusion celebrations going on today. Cinco De Derby or Derby De Mayo. Either way there will be a lot of food and drink consumed by those who are enjoying themselves.
