Louisiana “Shrimp Foil”

This is quick way to take a culinary trip to Louisiana for a shrimp boil but won’t take quite as long. This is delish!

Laura B's avatarThe Soup Diva

  • 1 lb shrimp (if frozen, thaw and drain first)
  • 1 lb andouille sausage, sliced
  • 12-16 baby red potatoes, halved or quartered
  • 8 mini ears frozen corn
  • 1/2 lemon
  • 1 stick butter, cubed
  • 2 tbsp Old Bay seasoning
  • 2 tsp minced garlic
  • 1 tsp salt

Cut 4 rectangles of aluminum foil and set aside. Heat 1/2″ water and 1 tsp salt until boiling; add potatoes, then corn, and cover for 10 minutes. Remove with slotted spoon and divide equally onto foil rectangles, followed by butter cubes and garlic, then sausage and shrimp. Squeeze lemon juice over each packet and sprinkle evenly with Old Bay. Wrap each packet securely and place on baking sheet. Bake at 400 for 20 minutes. Allow to rest for 5-10 minutes before serving.

All You Need Is Love, Neighbors and Self

Love your neighbor as yourself, all you need is love….well Jesus and the Beatles get that right.

Simply…love.

Daily Prompt: Bottle

My emotions and feelings you can find in a bottle. Yeah as a man sometimes I keep stuff there. You know we aren’t always good at sharing and that sort of thing. Putting a cap on that bottle keeps everything inside, makes life less messy. You know it harms the person and the people they love when they keep things bottled up. However it’s what many people do. I even preach its OK to share the spiritual and emotional load with others but I suck at practicing that. Bottles come in handy for drinking stuff too so you can handle your life that way too.

From A Fortune Cookie

Success is never final and failure never fatal. It’s courage that counts.

Is it me or are fortune cookies less about fortunes and more about safe proverbs. Maybe someone got sued and it ruined it for the rest of us.

It’s Monday Again, Darn It!

I wish I could pretend but alas I am in my cubicle at my desk working. Make the best of it everyone. Love, grace and a whole lot of peace today.
