Mexican Flag Cornbread

This cornbread paired with the “Easy No-Peasy” Vegetable Beef Soup is a great meal!

This cornbread contains the flavors of Mexico as well as the colors of its flag!
  • 1 cup self-rising white cornmeal mix
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1 cup Mexican blend shredded cheese
  • 1/2 cup milk
  • 1/2 cup frozen corn
  • 1/4 cup sour cream
  • 2 tbsp diced pimiento
  • 2 tbsp white sugar
  • 1 tbsp jarred jalapenos, seeded and diced fine
  • 1 tbsp chives, diced fine (optional)
  • 2 tbsp your favorite cooking oil + 1 tbsp for pan

Preheat skillet or cake/pie pan in oven at 350 degrees. Stir together all ingredients until incorporated (do not over-stir). Remove skillet or pan from oven, pour in 1 tbsp oil and swirl around (careful, it will sizzle!) Pour in cornbread batter immediately and place back in oven. Bake 15-20 minutes; switch to broil and leave in oven until top is desired brownness (about 5 minutes).

“Easy No-Peasy” Vegetable Beef Soup

This soup is delicious and ideal for a winter night. Paired with my wife’s “Mexican Flag” Cornbread its a great meal. Try it out yourself.

I wanted to create a soup that evoked the homemade goodness of my father’s legendary vegetable soup, but using mostly frozen and canned vegetables in my beloved “dump it and forget it” slow cooker (and without any icky green peas). I think I succeeded fairly well! (Also, the kitchen would be destroyed when Dad made his soup; this involves very little cleanup.)
  • 1 lb ground beef
  • 1 small onion, diced (about 1/2 cup – I buy pre-diced)
  • 2 stalks celery, diced (about 1/2 cup – I buy pre-diced)
  • 1 cup frozen bite-size carrots
  • 1 cup frozen cubed potatoes
  • 1 cup frozen corn
  • 1 small (6-10 oz) pkg shredded cabbage
  • 28-32 oz beef broth or stock
  • 2 15 oz cans tomato sauce
  • 1 can diced tomatoes & green peppers
  • 1 can black-eyed peas
  • 2 cloves garlic, minced (about 1 tsp)

Rambling About Time and Money

Everything comes down to price and convenience if you think about it. Do we have time to devote to something and will it fit into our calendar and is it close by. Friends, most people are about time and money…two things we seem to have less of these days, although we still have the same 24 hours in a day but our money is always in flux.. Time and money are things we lament and celebrate in our culture. This is really a statement on what our values and priorities are.

Happy Saturday Friends

It’s the weekend finally my good people. Whatever you are doing I hope it’s all good and fun, or something like that. After a very interesting week I am glad to be chilling out at home. This morning I made pancakes and sausage and I have consumed two cups of coffee. I also slept in later than normal which was good. At the moment my dog is curled up next to me in the seat normally occupied by his mommy. Right at this moment life is good and I hope it’s good for all of you my friends.

Feeling Emotions

Emotions are a blessing and a curse. Feeling stuff makes us human and that can be awesome but it also can suck when it’s stuff we have to cope with. People are trying to get by and that makes it harder. Peace to you my friends in all the things you are going through.

Followed and Friended

In the blogging and social media world I don’t mind being followed. However when someone who is way cooler than me does it that makes me wonder a little. I am just a blogger who chronicles and curates the silly, serious and sacred things in my life and some of the current events of the day. My blog can be a random collection of things from quotes to six-word-stories and that sort of thing.

Some of you are from fabulous places where you have glamorous lives and yet you find something in my little blog that interests you, that’s pretty cool.

To all of you who choose to follow me I appreciate it. Really its nice. Being followed leads to being friended I think.
