Today’s work looks like yesterday’s and could be the same tomorrow. Getting ahead of the curve these days is getting harder and harder. Things change and everyone has to adapt and be ready.

Potatoes Au Gratin

These spuds were delicious. Just in time for Bastille Day.

This delicate and decadent dish (PommesDauphinoise en Français) was made to accompany my Easy Chicken Cordon Bleu for our Bistro Night celebrating Bastille Day. Tres magnifique!

  • 2 lbs Yukon Gold potatoes
  • 1 cup shredded cheese (Gruyere is traditional, but any cheese will do)
  • 2 cups milk or half-and-half
  • 1/2 stick butter
  • 1/4 cup flour
  • 1 tsp dried thyme or 1 tbsp fresh
  • 1/2 tsp garlic powder
  • pinch of nutmeg (optional, but traditional)
  • salt and pepper to taste (liberally)

Slice potatoes as thin as possible, no more than 1/4″ (a mandolin works very well for this). Melt butter and stir in milk or half-and-half. Layer half of potatoes in bottom of prepared baking dish and sprinkle with half of flour and seasonings, then half of cheese, then half of butter/milk. A Clean Desk = A Productive Day

In my most recent “Wordless Wednesday” post you see my desk at work after I spent time cleaning it up. The benefit of that is an insanely productive day. I am glad I spent that time clearing and purging, my boss is happy as well.

Cause and effect is a weird thing ya know.

Connection With Self

Connecting with ourselves is a good thing. Our minds however have loads of stuff floating around them that is one distraction after another. Clarity means spiritual and emotional well being. I am one of those people who struggles with this. I am hoping that I will get better at it. Finding peace means rest and hopefully hearing from ones inner self. The world could find peace that way.
