Tony’s Sausage Queso Dip – A Great Super Bowl Snack Idea

I make a dip that is enjoyed by family and friends. There are many variations on this queso dip that others make. My opinion is that anytime there is cheese, cream cheese, sausage and sour cream are involved then you can’t go wrong.

  • 1 Roll of Breakfast Sausage (spiciness optional)
  • 1 Brick of Cream Cheese
  • 8 oz Sour Cream
  • 4 Cups of Shredded Cheese (I like a blend of Monterrey Jack, Queso, Asadero, Cheddar)
  • 1 Jar of Salsa (mild, medium or hot)

Brown sausage (drain grease) blend in cream cheese until melted and well incorporated. Add sour cream, shredded cheese and salsa. Stir ingredients together and let cheese melt. Add in cayenne pepper or other warm spices. Use a slow cooker to combine ingredients and keep the dip warm. Serve with tortilla chips or veggies.

Nachos, Yes Please

Tonight I made nachos and they are really easy to make.

  • Tortilla Chips
  • Precooked chicken strips from the frozen foods section
  • Taco Seasoning
  • Salsa
  • Mexican four-cheese blend
  • Scallions
  • Sour Cream
  • Hot Sauce

On a baking sheet spread a layer of tortilla chips and spray lightly with cooking spray. Saute` chicken and taco seasonings in a small pan until incorporated. Spread chicken, salsa and cheese on chips. Place in a 350 degree oven for about 15 minutes or until chips are lightly browned and cheese is melted. Garnish with extra salsa, sour cream, hot sauce and scallions. Serve with favorite beverage.

Cheese contains a chemical found in addictive drugs, scientists have found. The team behind the study set out to pin-point why certain foods are more addictive than others. Using the Yale Food Addiction Scale, designed to measure a person’s dependence on, scientists found that cheese is particularly potent because it contains casein.  The substance, which is present in all dairy products, can trigger the brain’s opioid receptors which are linked to addiction.

Supper Tonight: Sloppy Tots

This looks like a strange concoction but its a great combination of a deconstructed Sloppy Joe on top of tater tots. We first came upon this dish on a church mission trip to Marion, Virginia where we had to eat up leftovers. We made Sloppy Joes and heated up tater tots. Our trip leader Dave had the idea to combine the two and Sloppy Tots were born.

Most folks will use a canned sauce for the Joe’s but I use a recipe I found online years ago called Ma Fosters Sloppy Joes and I use ready made tater tots that heat in the oven. They are better with a little crispness to them.

As you see we put some cheese on top to give it some extra flavor. Try it, it’s delish!

Tony’s Holiday Meatballs. A Tasty and Easy Holiday Crowd Pleaser

Every year during the holidays I do meatballs for gatherings of family, friends and work. There is nothing incredibly gourmet about them but they are easy to prepare and they can feed a crowd.

The ingredients are fairly simple.

  • 1/2 cup Soy Sauce
  • 1 Bottle of Bottled Barbecue Sauce
  • 1 Bag Fully Cooked Italian-style meatballs

In a slow cooker put in meatballs (preferably frozen) and cover them with the soy sauce and barbecue sauce. Put the slow cooker on its highest setting for about an hour and a half, then reduce to low.

These meatballs will have a unique flavor with the soy and barbecue sauces along with the seasonings in the balls themselves.

Cheese Blintzes

We had this for breakfast this morning. These blintzes are slightly sweet, somewhat savory and all good. Enjoy them any time of year.

Cheese Filling:

  • 8 oz small-curd cottage or ricotta cheese, drained
  • 8 oz farmer’s cheese or cream cheese, softened
  • 1 egg
  • 3 tbsp sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla
  • Pinch of salt
  • Zest of 1 lemon (optional, but adds a nice bright flavor)

Crepe Batter:

  • 2 eggs
  • 2 Tbsp. vegetable oil
  • 1 cup milk (can also use cream, half-and-half, or egg nog)
  • ¾ cup all-purpose flour
  • ½ tsp. salt
  • About 2 Tbsp. butter or margarine (for coating skillet)
