Cinco de Mayo is an annual celebration held on May 5. The date is observed to commemorate the Mexican Army’s difficult victory over the French Empire at the Battle of Puebla, on May 5, 1862, under the leadership of General Ignacio Zaragoza.
It’s also a time for many to celebrate with Mexican food and drink. It seems to be another reason to have a big party. No matter how you celebrate have fun, be safe and remember the reasons for the day.
Tonight I made nachos and they are really easy to make.
- Tortilla Chips
- Precooked chicken strips from the frozen foods section
- Taco Seasoning
- Salsa
- Mexican four-cheese blend
- Scallions
- Sour Cream
- Hot Sauce
On a baking sheet spread a layer of tortilla chips and spray lightly with cooking spray. Saute` chicken and taco seasonings in a small pan until incorporated. Spread chicken, salsa and cheese on chips. Place in a 350 degree oven for about 15 minutes or until chips are lightly browned and cheese is melted. Garnish with extra salsa, sour cream, hot sauce and scallions. Serve with favorite beverage.
