What we had for supper last night. It’s a great dish to throw together with some pantry ingredients and then some.
- 8 oz fettuccine noodles
- 1/2 onion, diced
- 1 red bell pepper, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1/4 tsp onion powder
- 1 tbsp flour
- 1 cup heavy cream
- 1 tbsp tomato paste (ketchup will work too)
- 1/2 cup Parmesan cheese
Boil noodles until al dente; drain. Saute onion and pepper until soft; stir in seasonings and flour until roux forms. Stir in cream and tomato paste and heat until bubbling. Remove from heat and stir in Parmesan, then pasta. Serve as a side or topped with chicken, shrimp, or other protein.

Though I have never heard of tomato paste and definitely not ketchup in a fettuccine.
