This is what we had for dinner tonight. With some slow cooked shredded pork it was a great soup on a cool Saturday night.
- 4 carrots, sliced or shredded
- 4 green onions, diced
- 1 red bell pepper, diced
- 8 oz fresh mushrooms, diced or sliced
- 32 oz vegetable broth (plus 1 cup water)
- ¼ cup creamy peanut (or almond) butter
- ¼ cup soy sauce
- Up to 1 tsp Sriracha
