Today Is Martin Luther King, Jr. Day In America

Today in America we remember the work of Rev. Dr. Martin Luther King, Jr. Each year, on the third Monday in January, we celebrate his birthday. This is the first national holiday to honor an individual black American. Rev. Dr. King was a champion of civil rights and through non-violent means worked to make the lives of everyone better. He is remembered for his iconic “I have a dream” speech he delivered in 1963 in Washington, DC. He was assassinated in Memphis in 1968.

Today we remember his witness to the world that every person should be treated equally. His work and life have inspired millions. He died doing what was right but his legacy does live on in the hearts and minds of people of all walks of life. Today should be a day of service and work to keep his dream and hope alive.

This show is brilliant and having the former “Doctor Who” companion as the lead role is splendid. She was born to play this role.

Shelia’s Broccoli Casserole

This is my mother’s broccoli recipe and its delicious. She has been making it for family gatherings for years and its always good.

This is my mother-in-law’s recipe. I don’t mess with success.

  • 24 oz frozen broccoli
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup dehydrated onion
  • 2 eggs
  • Seasonings to taste (Mrs Dash, other seasoning blend, or salt/pepper/garlic powder)
  • 7 oz box Cheezits crackers
  • 1 stick butter or margarine

Rehydrate onions with enough water to moisten all pieces. Steam broccoli until done and cut into fine pieces. Mix everything except last 2 ingredients and spoon into oblong dish. Crush crackers and sprinkle on top. Melt butter and pour over entire casserole. Bake uncovered 350 degrees 30-40 minutes.
