Upside-Down Taco Pie

This version of Taco Pie is filling, tasty and makes enough to have for leftovers. Cook once, eat twice.

This recipe is quick, easy, delicious, and adaptable* to your tastes (or those of your family!)

  • 1 lb lean ground beef (or turkey)
  • 1 can black beans, drained and rinsed
  • 1 small can green chile peppers*
  • 1 16 oz jar salsa*
  • 2 cups shredded Cheddar or Mexican blend cheese
  • 1 packet taco seasoning*
  • 1 package cornbread or corn muffin mix*
  • 1 egg
  • Milk according to package directions
  • 1 tsp minced garlic [about 3 cloves] or garlic powder
  • 1 tbsp dried cilantro (or 1 tsp fresh, chopped very fine)

Brown meat in medium-sized skillet (preferably cast iron); stir in taco seasoning. Reduce heat to medium. Spread drained and rinsed beans evenly over meat; follow with chiles and then salsa. Sprinkle cheese evenly over surface and reduce heat to medium-low. Prepare cornbread mix as directed, then stir garlic and cilantro into batter. Tunes Tuesday – The Cars – You Might Think. You Might Have Heard It on #BrainDead

This song is visually stunning and very 1980’s. The Cars are one of those american pop/rock bands that have interesting vocals and catchy tunes. On CBS TV a show called “BrainDead” has been using this tune to indicate when people who have been infected by alien bugs are on the scene. I would have never thought this song would be brought back into popularity in such a way.

Discover Challenge: Superhero

Superheroes are a huge part of the pop culture because they help us to aspire to do greater things. We all have in our minds what a superhero is to look like and to do. They are to leap tall buildings in a single bound or perhaps sweep in to save the day. Some of them use mutant powers to make things equal for everyone.

We know the names from Marvel and DC universes but the heroes I wanna talk about don’t wear capes. People who get up in the morning to do a days work are heroes. First-responders are great heroes who go into danger to save lives, fight fires, give breath back into people whose lives are slipping away. Teachers who prepare students for the world of tomorrow are heroic. A person who wears the uniform of their country to defend it are heroes. People who give their time, talent and treasure. Blood donors who give to save 3 lives. Parents and families are heroes who do their part to contribute to community and civilization. Some heroes stand up to fight for the rights of everyone.

Superheroes come in all shapes, sizes, races, orientation and gender. My heroes have been my spouse, parents and grandparents, aunts and uncles and friends. Everyone has the chance to be a super hero if they make the choice to do so.

Sometimes the Internet tells you things you didn’t really want to know. It can sure break your spirit and heart. The bad news can make the good news be not such a big thing.

Farewell Rizzoli and Isles

Tonight the TNT network crime drama Rizzoli and Isles says farewell. I like this show for having two intelligent, competent, fearless professional women solving crimes for the Boston Police Department. Angie Harmon and Sasha Alexander brought a detective and medical examiner to life. I will miss this show like many others that have left over the years. Goodbye and thank you Detective Rizzoli and Dr. Isles.

Convenience To Go

OK, this might be the most random and unusual post you read today. Bear with me.

The convenience store is one of the most ubiquitous places in many parts of our country. Socially its an equalizer because everyone needs fuel, bread, milk and yes beer. I stop by this one above a couple times a week for a guilty pleasure or just to wet my whistle. In these places you can now get pizza, espresso, freshly made sandwiches and more. Of course you can get a regular cup of coffee to keep you awake as you are on the road or headed to work.

People who visit there come from all walks of life which makes for great people watching. It can be a challenging place to work too because of the safety factor. But overall the security has gotten better over the years. All in all its a place where community stops and goes from seven in the morning to eleven at night.

Convenience to go can make life better and can keep you moving.
