Music Monday – Adele – Rolling In The Deep

We danced to this song at Zumba tonight. Adele is one of the greatest vocalists in the world and she does great music. Her voice is simply amazing and is an instrument in and of itself.

My Emmys 2016 Recap

Last night a few of my favorites won Emmys for their work in Television. Diversity seems to be the rule in Television these days with many people of color and orientation being nominated. “Game of Thrones” and “The People vs. OJ Simpson: American Crime Story” won big. My favorite reality show “The Voice” won as well. Jimmy Kimmel did a great job as host. I would like to see some different winners in Lead Actress in a Comedy as well as Variety Show.

I was happy to see these fine thespians of the “small screen” win last night.

Chicken Corn Chowder

We had this for dinner tonight and it was a delicious experiment on behalf of my wife. Throwing together ingredients you have on hand can create some good things.

  • 1 lb chicken breasts or strips (fresh or frozen)
  • 32 oz chicken broth
  • 8 small red or gold potatoes, diced
  • 1 small onion, diced
  • 2 cups frozen corn kernels
  • 2 cups half and half
  • 1 cup shredded Cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 small can diced green chilies (optional)
  • 4 strips cooked bacon, crumbled
  • 2 tbsp butter
  • 1 tbsp dried parsley
  • 1 tsp Old Bay (or your favorite seasoning blend)
  • 1 tsp minced garlic (about 3 cloves)
  • Salt and black pepper to taste
  • Chives (for garnish, optional)
In large pot or slow cooker, place chicken, broth, potatoes, onion, chilies, bacon, butter, garlic, and seasonings. Cook on low until chicken is done (30-60 minutes for stovetop or 2-6 hours in slow cooker, depending on chicken). Remove chicken, shred, and return to pot. Stir in half and half and cheeses, and serve when fully heated. Garnish with chives if desired.

TV’s biggest night returns this Sunday with the 68th annual Emmy Awards. Will standbys like Game of Thrones and Veep take home best series trophies once again, or first-time series nominations for shows like The Americans, Black-ish or Mr. Robot result in any upsets? And how will Jimmy Kimmel tackle his second stint as Emmys host?

I love television and this is my favorite awards show because there seems to be a higher than usual nerd factor here than The Oscar’s which seem to be a little more reserved and traditional. TV is my favorite old-school medium.

 

A Ramble About Baptism

The following post is one of those posts about my faith I do every once and awhile. I hope you who are not of the same faith persuasion will bear with me for a few moments. Thanks for our universal connections.

episcopal-baptismAt my baptism as an 11 year old Baptist kid I was immersed by the Rev. Monty Jordan. That was an experience I will never forget. For the last sixteen years as a United Methodist and in the last year as an Episcopalian I have seen this sacrament expressed as sprinkling, pouring and immersion. There is one Lord, one Faith, one Baptism from a Christian perspective. As far as I am concerned the amount of water needed isn’t what is important. Once you are baptized its a thing between you and God and it should stick with you and be honored in your faith journey. Something universal, something timeless, something that brings you into communion with Christ. Today I saw a baptism of a little one at church and it reminded me that being cleansed, is a spiritual act that takes you into eternity.
