
I made this fried rice tonight and it was really easy to make. This is also a great way to compile leftovers of this and that into a delish dish. I used leftover chicken as the lead ingredient and added carrots, onions, eggs and of course rice. Use whatever you might have left over in the fridge. Be sure you use complimentary seasonings and spices to give it a taste of Asia.
I love making fried rice; however, I don’t have enough leftover rice because Hubby likes it and so does the dog! Your looks really good!

About once a month, we go to a not-quite-authentic chain restaurant, P..F. Changs. I love their food, even if it isn’t quite authentic. An order of shrimp fried rice feeds me for 3-4 meals, so I definitely get my money’s worth, and it tastes better with each consecutive day! Other times, I use leftover chicken and make my own. It’s all good!
