I made shrimp tacos tonight paired with Laura’s Mexican street corn.
The tacos were made with pre-cooked shrimp marinated in Dan-o’s Tac-o seasoning, olive oil, and lime juice. I lightly roasted the shrimp in the oven and put them in warmed street taco shells with cojita cheese and lettuce with a squirt of more lime.
Laura said they were good, and for that I am glad.
