Connections

Making connections is what I do for a living. It’s a part of who I am. Blogging is no exception. I have enjoyed every connection I have made because its helped inform me about the world around me. It’s not likely I will visit the countries of the bloggers I follow but it’s nice to know we have much in common and I can get a peek at the world they live in. My blog is a tool to connect with the global community around me and every connection made is a new friendship.

A Sunday

My Sunday has been far from a restful day and I enjoyed it. This morning we went to church and afterwards we enjoyed our first pot luck dinner in the form of a tailgating party. This afternoon was spent at work helping with some production and getting a couple things done. Tonight we went to dinner at my folks house. I chilled out this evening watching some television and some blogging. I won’t lie, I am tired and I look forward to an evenings rest and relaxation.

I hope you all have had a good weekend. We now face the week ahead, lets do our best!

Baked Cheese Grits

Cheese grits are a special thing around these parts. I enjoy this recipe with some chili. The combo dates back to my youth going to church fellowship suppers.

  • 4 cups water
  • 1 tsp salt
  • 1 cup quick grits
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp white pepper
  • Pinch of cayenne pepper (optional)
  • 2 tbsp butter
  • 2 eggs, beaten
  • 1 cup shredded sharp cheddar cheese

Bring water and salt to a boil; reduce to medium-low and stir in grits. Cook until done (5-10 minutes). Add seasonings and butter and allow to melt. Beat eggs and temper with hot grit mixture, then stir into grits once butter has melted. Stir in cheese; once melted, pour into casserole dish sprayed with cooking spray. Bake 350 degrees for 1 hour. (Can be doubled for larger crowd.)

This recipe is an excellent companion for my Black Bean Chili (trust me, it’s a family tradition with my in-laws — a scoop of grits topped with chili, yum!)

My Team Won Today! Go Chattanooga Mocs! #gomocs

Today was a good day at Finley Stadium Davenport Field as my hometown team won its game! A few years ago they would have beaten us handily, those days are over.
