My Grandmother, Gone Almost A Year

In a few days it will have been one year since my grandmother passed way. She had Alzheimer’s so the farewell had been a long one. Anytime you lose a parent or grandparent it’s hard because you are so used to seeing them there and now they are gone. The world doesn’t look or feel the same because you can’t hear their voice or feel their touch. I do miss her every day but it does get better. Life does go on.

If one hasn’t blogged in awhile and it happens to all of us then there is pressure to post something lengthy to make up for it.

My recommendation is a couple of short paragraphs just to get things going again. Perhaps it can “set the table” if you will for other posts. It can get people used to seeing you again. The risk of not posting regularly is losing followers who prune their reading lists frequently.

Posting can be as simple as sharing a picture or maybe a quote. Don’t feel like you have to churn out 1000 or more words at a time when maybe 100 will do the trick of getting you back in the game.

Keep on blogging good people whenever you can.

Confirmation Class At St. Peters Episcopal

On Sunday we are starting a confirmation class at a nearby Episcopal Church we are interested in. This class will help us know more about the local church and the greater Episcopal church. It will last six weeks and could lead to us joining. I am excited about getting started and seeing what God might have in store for us. We have been visiting some churches locally but are settling down for awhile. It should be fun.

Pesto Ranch Chicken with Root Vegetables

This is what came from our slow cooker tonight. It was savory, tasty and easy to prep. Plus it will feed us for about 3 meals. Try it out for yourself.

  • 6 boneless chicken breasts
  • Medium bag baby carrots
  • Small bag red potatoes
  • 4 shallots
  • 1 jar prepared pesto (6 oz or so)
  • 1 packet ranch dressing mix
  • 2 cloves garlic, minced
  • 4 tbsp butter
  • Salt and pepper to taste

Place carrots in bottom of large slow cooker. Cut potatoes in half and place on top of carrots; season liberally with salt and pepper. Rough cut shallots and cube butter; scatter both on top of potatoes. Season chicken breasts with salt and pepper and lay in single layer on top of everything.

In small bowl, mix together pesto (save the jar), ranch dressing mix, and minced garlic. Add about a half cup of hot water to the pesto jar; place lid on jar and shake well. Uncover and pour evenly into slow cooker. Spread pesto mixture in bowl evenly over chicken in slow cooker. Cover and cook for 6-8 hours on…
