French Onion Chicken

We had this for supper tonight and it was very tasty, tangy and a good Sunday night supper or any night for that matter.

I “discovered” this dish at the restaurant at the Museum of Appalachia on a staff retreat. They told me the basics of how they made it, but I had to create the recipe on my own. It’s insanely easy and very yummy!

  • 1.25-1.50 lb boneless chicken breasts or strips
  • 8-12 oz French dressing (1-1.5 cups)
  • 1 container French-fried onions
  • Salt and pepper to taste

Season chicken pieces liberally with salt and pepper and place in covered casserole dish. Pour dressing over them and allow to marinate in refrigerator at least 2 hours. When ready to bake, remove from fridge while oven preheats to 400 degrees. Pour onions over top until completely covered; re-cover dish and bake at 400 for 30 minutes. Uncover and bake until sauce is desired consistency.

Happy National Sister Day

I am grateful for my sister Shannon (pictured above on the left) and to our mother (pictured in the center) who made us. Shannon is a good person, hard worker and a fellow nerd. She is a valued part of my life. I love you sis!

Chattanooga Football Club Match Tonight! Win and Then Play For A League Title

Tonight our semi-pro soccer team is playing for a shot at the National Premier Soccer League championship. Chattanooga Football Club (or CFC as its known) is a wildly successful team who have captured the hearts of the hardcore and casual soccer fan here. They play hard and represent our city well. They hope to have 10,000 people for the game tonight and I hope they do.

Their biggest fans are known as the “Chattahooligans” who in the spirit of football/soccer fans in other parts of the world yell, scream and sing throughout the game. When you see these fans doing their thing you can’t help but want to get kind of rowdy too.

So tonight will be a big game and we hope to have loads of fun with thousands of our friends and neighbors.

My Heroes Come And Gone

Mario Lopez said on Twitter that the bad part of getting older is seeing your heroes pass on. I must say he is on to something. Many of the people in real life and in pop culture who I call my heroes are leaving this life. At the ripe old age of 45 I am reading more and more the people who were a important part of my growing up are going through transitions in life. I am grateful for the lives of people I looked up to and admired. They influenced me to be who I am.
