Chicken Pot Pie

Pot pie is a great dish that is warm and comforting and delicious. As fall approaches its something that can fill your belly and soul.

  • 3 cups cooked shredded chicken (I use this cooking method)
  • 2 cups chicken broth
  • 1 can crescent roll dough
  • 1/2 stick butter
  • 1 cup broccoli florets, diced fine (fresh or thawed from frozen)
  • 1/2 cup onion, diced fine
  • 1/2 cup diced or shredded carrot
  • 1/4 cup celery, diced fine (optional)
  • 1/4 cup flour
  • splash of half and half or milk
  • 1 egg
  • 2 tbsp minced parsley (optional)
  • 1 tsp minced garlic
  • 1/2 tsp thyme
  • pinch of turmeric
  • salt and black pepper to taste

Melt butter in medium skillet (cast iron if you have it) on medium high heat. Add onion, carrot, celery, garlic, and salt and pepper, stirring until onions begin to soften and become translucent. Add chicken and broccoli, then sprinkle flour over the top, stirring very well until incorporated. Pour in broth, stir, and allow to bubble and thicken (may need to reduce heat slightly). When done…

Status Update

I am sure glad it’s the weekend. This has been a day of hanging out at home and chilling out. Harry Potter movies have kept us company throughout the day, they never disappoint. Also I am glad its a 3-day weekend. I hope you are all well and having fun.

Not only is it the first of September, it’s also Friday. For me it’s the beginning of a 3-day weekend because monday is Labor Day in the USA. Have a great Friday my friends, may it sparkle!

Ok, August kinda sucked. Yes I did celebrate my birthday but other stuff happened to make it not so good. Let’s hope for a better September. OK. OK.

Something About Online Living

The lure of a virtual life is so much more appealing than that of a real existence. We find people who can’t differentiate what is artificial and what is actual.

When you un-friend someone on social media it could be interpreted as un-friending in the real world which is not the case but the two seem to have linkage in the hearts and minds of many.

People are emboldened to do and say things on social platforms that they might not say to your face. That in itself can cause many problems and can end friendships and family connections. You have to decide if it’s all worth it.

Everything is amplified online and there is no way to translate full meaning in text or words without possibly offending someone. Freedom of expression is a great thing but with it comes great care and responsibility. You have to know who you are conversing with and not everyone will get what you are saying could be humorous or even serious.

Your online life is to enhance your real world life not the other way around. Although for me I am always looking for things to blog about and to be inspired by what happens to me in daily living.

My friends it’s a very good thing to get out and get off-line for a bit. Get some fresh air, go to a coffee-house and meet friends face-to-face. Engage in conversations over a meal. If you have a porch invite your friends over for real face time. The social network has existed for years before computers or social networking. It will give you a lot of great ideas to post about.

Living online should be done in a measured way. Living off-line is where the action and adventure lies. Having the world at your fingertips does not replace having the world outside your door.

Diana Princess Of The People #TBT

Princess Diana left this world 20 years ago today in a tragic car crash in Paris. Her legacy has impacted the world in all this time. He son’s William and Harry have carried on her mission of being there for the people. She would have been 56 had she lived. Who knows what more she would have been able to do. Her daughter-in-law Duchess Catherine and her grandkids are making their own contributions to the work that Diana would have done. Remember her today as a human being then a member of a royal family.
