Happy Labor Day In America and Around The World

Labor Day in America is a holiday to recognize the workforce of America. That force is a diverse collection of people who do the hard work of keeping this country vital and moving. We need laborers of all kinds whether it be technology, manufacturing, medical, law enforcement, construction, clerical, administrative, blue collar, white collar it all makes a contribution to the greater good. Without the workers of the world a lot of things wouldn’t come into reality. It does take a dream but for things to become real it requires a lot of blood, sweat and yes, tears to see what is on a piece of paper become something you can see, touch and use.

Thank you workers of America and the world for making a difference.

Mongolian Beef

Sunday dinner done Mongolian style. It’s easy, delish and nutritious.

  • 12-16 oz flank or chuck steak, sliced into strips
  • 1/4 cup soy sauce
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 3 tbsp sesame (or other) oil
  • 2 tbsp molasses (or brown sugar)
  • 1 tsp chili garlic paste
  • 1/2 tsp minced ginger
  • black pepper to taste

Marinate beef strips in soy sauce and black pepper for at least one hour. Dredge in cornstarch. Heat oil in skillet or wok on high and add meat, searing on each side for at least one minute (it should be darker and have a crispy coating). Remove meat, reduce heat to medium-high, and pour in remaining marinade plus all other ingredients. Stir well, scraping the bottom of the pan, and heat until thickened (can add a little cornstarch slurry if needed). Add beef back in and stir until well coated. Serve with rice (goes very nicely with Roasted Sesame Broccoli and Carrots!)

Fun In The Sun Today At The Chickamauga Dam Swimming Beach #Chattanooga

After church today we went to the lake for a little swim. Other people had the same idea. This Labor Day weekend was a great time to get wet and to wrap up the Summer. The Chickamauga Dam swimming area is a great place to swim, picnic, and just to chill out under a shade tree. Nearby there is a boat launch so you can get out on the water for skiing or fishing. The water was refreshing to say the least.

My Dark Web Mood

I am into the dark web…not the nefarious hackers and that sort of thing but my current style of wanting a darker but I hope not depressing appearance. Lately my personal preferences gravitates toward having dark backgrounds with white/light fonts on my computer desktop, blog and twitter feeds. It does set the mood I must say.

I changed my blog theme again to something darker that clean and eye-catching.

I am using the new “night-light” function on my Twitter feed full-time.

My preferences have something to do with my eyesight and also to just set a more serious mood. The lighter stuff I find hard to look at after a while. It’s my hope that the reader will enjoy it and find it easy on their eyes as I find it on mine. After all the reader is what is most important here.
