Cast Iron Mac & Cheese

Almost everyone loves mac and cheese, this is a great recipe.

This is a simple and delicious one-pot main OR side dish* that should please all the cheese-lovers in your life!

  • 8 oz large elbow macaroni  noodles
  • 2 cups shredded sharp Cheddar cheese, divided
  • 1 cup creamier shredded cheese (Monterey Jack, provolone, mozzarella, gouda)
  • 1/4 cup shredded Parmesan cheese
  • 1/2 stick butter
  • 1 medium (12 oz or so) can evaporated milk
  • 1 egg
  • 1 tbsp yellow mustard
  • Salt and white pepper to taste

Preheat oven to 350 degrees. Fill 9 or 10 inch oven-safe skillet with 1 inch salted water and bring to boil; add noodles and cook to al dente. Drain and return to skillet with the eye turned off. Add butter, stirring to melt; then add cheeses (saving back 1 cup of the Cheddar) and stir well until mostly melted and incorporated. Stir in milk, egg, mustard, and white pepper. My Grandfather Is Crafty

My grandfather started carving/whittling a couple of years ago. He made this ball in cage from one piece of wood. It’s not a very big piece of wood but he had to remove a bunch of material to form the cage and the ball inside. Pretty remarkable and pretty cool..

Just Saying – Independence Things

To all my friends who love this country but don’t subscribe to the notion that you have to always like it I salute you. Independence is a gift that can be taken away as easily as it was given. God’s grace should be available to all nations without favor toward one. Everyone should have a seat at the table of discussion and we should all have access to things that give us the promise of life, liberty and happiness without discrimination. Independence Day is a important time to consider what this nation is still becoming. Independence doesn’t mean always going it alone because we are still accountable to one another for our actions. Patriots come in all forms and viewpoints and they don’t always carry arms. Let freedom truly ring…Just saying.
