Wow, Friday has come and that is good news. Let’s have a great day everyone. The weekend is just a little while away, hang on everyone.

A Bright Moon In A Clear Sky Full Of Stars

Last night the sky was clear and the moon was so bright it lit up the darkness. There is a cool beauty of the whole thing. Looking up in the sky to see moon in a sea of stars. Creation is awesome that way. It just seemed to make all the cares of the world go away if just for a moment. Think about how awesome it all is that we can see that majestic wonder just by looking up. Maybe there is something to be said about that.

People do things to the best of their abilities and sometimes it isn’t good enough. No one likes to be criticized but it’s a part of life. I think we are all sensitive to being told the not so good things about you. We all have to do what we can to have a thick skin but it isn’t always possible. Do the the things you can to keep the critics at bay.

Spicy Peanut Noodles

Shrimp, peanut sauce and noodles oh my! What a great combination of flavors. Yummo!

  • 2 cups cooked protein (chicken, shrimp, or tofu suggested)
  • 8 oz medium rice noodles
  • 1 tbsp sesame oil (or other oil of your choice)
  • 1 tsp minced garlic
  • 1 tsp crushed ginger
  • 2 cups vegetables in bite-size pieces (shown here: broccoli and carrots)
  • 1/4 cup peanut butter (smooth or crunchy)
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp fish sauce
  • 2-3 tsp chili garlic paste
  • 1 14 oz can coconut milk
  • Salt and black pepper to taste
  • Scallions, cilantro, lime wedges, and/or chopped peanuts for garnish

Boil noodles until al dente and drain most of water. Heat oil in skillet on medium heat; add garlic and ginger, stir and then add vegetables and cook until starting to soften. Stir in peanut butter, soy sauce, honey, fish sauce, chili paste, and salt and pepper. Reduce heat when smooth and stir in coconut milk. Add additional seasoning as needed. Transfer noodles…

The Flu Bug, Impacting Life and Learning #flu

The flu bug has gotten bad where I live. So bad that schools have used some of their built-in snow days and cancelled classes so the children and staff can get better. Everyone loves a day off but this is not the way many wanted it to come about. Several people I work with were scrambling to find child care options for tomorrow as our local school system has also called off school for Friday. I got a flu shot in November. I can’t remember the last time I had it. Those who got the bug are sitting at home trying to get well.
