There’s something about freshening up the old blog to give it more functionality and to make it look more like a website. I chose the Motif theme to show off my posts in a larger format and to give the site a throwback feel. I hope you enjoy it.

Manhattan Seafood Chowder

This was a great soup made of things we had on hand. Good stuff.

This was a surprisingly successful “clean out the pantry & freezer because I don’t want to go to the store” soup. (I love when an experiment works the first time!)

  • 1 box (32 oz) vegetable broth
  • 16 oz frozen cubed hash browns (half of 32 oz bag)
  • 2 frozen fish fillets (I used Haddock)
  • 1 cup carrots, cubed or sliced
  • 3 4 oz cans shrimp (or clams)
  • 1 15 oz can tomato sauce
  • 1 15 oz can diced tomatoes with green peppers
  • 2 strips bacon, cooked and crumbled
  • 2 tbsp dried minced onion
  • 1 tbsp fish sauce (optional)
  • 1 tbsp Old Bay or your favorite seafood seasoning
  • 1 tsp minced garlic
  • Salt, black pepper, and red pepper flakes to taste
Put broth, potatoes, fish, carrots, onion, garlic, salt, and pepper in slow cooker on low for 3-4 hours (or 45 minutes on stove top) until fish is cooked and flaky. Break fish…

Something About Life, Liberty, Happiness

“Life, Liberty and the pursuit of Happiness” is a well-known phrase in the United States Declaration of Independence. This is also something that I feel should be extended to every human being around the world.

No matter who we are or where we come from everyone should have the right to a life of their choosing, the liberty to work for it and the freedom to pursue Happiness. One thing I would say is that no human being should prevent another from being able to be who they want as long as its legal, ethical and does not impact others in a negative way. So that means you can’t go streaking naked through a movie theatre yelling fire, fire!

No matter who you are, you should be able to dream big, achieve big and to do good things that can make a difference for your friends and neighbors. America is great when life, liberty and happiness are accessible to everyone no matter creed, orientation, race or ethnicity. It’s my hope no matter where you live in the world you have the opportunities to be who you choose to be in the place where you are now.

Be happy and make the world a better place by being yourself and living well.

Status Update 

Today was very much a Monday. I had a headache, bum foot and it was a slow day at work. I did modified Zumba tonight. Tomorrow is Tuesday whether I like it or not.
