Crack Potatoes

Dinner part 1. It is really tasty is a crowd pleaser.

There’s a reason why there are rarely any leftovers of this dish.

  • 1 32 oz bag frozen hash browns
  • 16 oz sour cream
  • 1/4 cup mayonnaise
  • 2 cups shredded sharp Cheddar
  • 1/2 stick butter, softened
  • 4 strips bacon, fried and crumbled (or 1/4 cup real bacon bits)
  • 6 chives, diced (can substitute 2 green onions)
  • 1 tsp salt
  • Black pepper to taste

Place potatoes in colander in sink and rinse until thawed and separated; let drain. In large bowl, mix all other ingredients together until well blended and add potatoes; stir to incorporate. Spoon into sprayed 13 x 9 x 2 baking dish and bake at 375 degrees for 45 minutes. These went really well with Mississippi Pot Roast.

Throwback Thursday – Pop Tarts Introduced on 9/14/64 #tbt

I love Pop Tarts. My favorite is the strawberry kind. You are never too old to eat them. They are a part of a complete breakfast.

Fried Rice Is Leftover Friendly

I made this fried rice tonight and it was really easy to make. This is also a great way to compile leftovers of this and that into a delish dish. I used leftover chicken as the lead ingredient and added carrots, onions, eggs and of course rice. Use whatever you might have left over in the fridge. Be sure you use complimentary seasonings and spices to give it a taste of Asia.

Universal Joint a Unique Restaurant in #Chattanooga

This is a restaurant that is in a former gas station in downtown Chattanooga. The Universal Joint is a great place for a meal on a Friday night, or any other time of day. The brisket tacos with tater tots we’re great. It won’t be the last time we go there.

Waffles and Wi-Fi

Hotels and motels have been offering free hot breakfasts and free wi-fi to get your business. Many of them rely upon tourism and business travelers to keep their rooms booked. So it only makes sense to offer free waffles and free wi-fi to keep the modern hotel or motel guest happy and coming back. With the advent of room sharing sites such as Airbnb the competition is getting stronger so you have to include extras to keep your customers  happy.

For me its a no-brainer. People wanna stay in places that make you feel cared for and that some essential modern needs are met. Of course price is always a factor in where we end up booking our reservations. Travelers are picky these days and it is an arms race of sorts. Do your research on sites or consult a travel professional who can help you get the best deal. Yes its about waffles and wi-fi but so much more too.

Daily Prompt: Snack

Snacking is great especially during a long day at work. Protein is king to keep you fueled. My favorite snacks tend to have copious amounts of peanut butter in them along with some form of chocolate, nuts and pretzels. I also enjoy peanuts on their own along with the occasional cashew. Of course there are chips and dip which is always interesting. Snacking is not bad if done in moderation. Often snacks have to take the place of meals when you are so busy you can’t slow down to have a legit breakfast, lunch or dinner. In my drawer at work there are a good assortment of snacks to keep me going. Like anyone I enjoy quality nibbles at home during the evening.
